Homemade Raw & Vegan | Gluten Free Cookie Dough Recipe
If you are looking for a guilt-free, vegan, plant-based, clean indulgence, watch out, MIND WILL BE BLOWN with this raw & vegan cookie dough recipe.
I wish I could take credit for it, but I have to thank my friend Ashley, for sharing Raw-Manda's website with me, as I snagged it from there, made it my own and NOW, have to share with you guys.
I mean, after all, #sharingiscaring, right?
You ready for the ingredients?? Brace yourself, this should only take you 5 MINUTES!!! And likely, less than 5 minutes to demolish the entire batch, however, I don't recommend that! It's super nutrient rich, so will fill you up fast. I'd be FLOORED if you were able to whack down the whole batch. And like everything, you can still overdo a good thing!
INGREDIENTS:
5-7 pitted dates
1 cup raw cashews
1 cup rolled oats (I used organic & quick cooking)
1-2 tbsp of unsweetened Almond milk
1/4 cup coconut sugar
1/4 cup Chocolate Chips (I used Vegan chips)
1/4 tsp Himalayan Sea Salt
1 tsp vanilla extra
** 1 tsp cinnamon (this was my addition, to make it my own). OPTIONAL
BUST OUT THE FOOD PROCESSOR:
Check out how I had to crank it up a notch, I had to crumble up some pieces atop Halo Top's ice cream! OMG!!!

BUST OUT THE FOOD PROCESSOR:
- Blend cashews, rolled outs, coconut sugar, cinnamon, salt and vanilla in food processor, until flour like.
- Add 2-3 dates in at a time, blend, then add the remaining until starting of a crumbly texture.
- Slowly drizzle in 1 tbsp of the almond milk. I added 1/2 to 1 more tbsp so it wasn't as dry.
- Transfer into a large bowl, fold in chocolate chips.
- Place on parchment paper in a loaf pan and freeze.
- Once frozen, chop them into little squares to munch on or add to ice cream! :)
