[RECIPE] Kid-Friendly Crockpot Shredded Salsa Chicken
Who doesn't need more simplicity in their life? When you have 4 kids, a home business, a household to run and well, a LIFE (sometimes), finding an extra 30 minutes to whip up something healthy and crafty in the kitchen, comes few and far between.
For so long, I thought the Crockpot was JUST for Fall or Winter! OH NO, my friends!! It's a great summer kitchen appliance too!
Yes, total mind blown!
I love throwing things into a bowl and eating it. I've never claimed to be a fancy chef or have perfect presentation. My goal is to get healthy foods, into our bodies, as quickly and easily as possible.
Hence, why this recipe is the BOMB dot COM! And, totally KID FRIENDLY!!! Yup, my little cherubs, except for the one I'm breastfeeding (she'll get it at some point), lapped it up! Score one for Mom!
Here it is for you:
Crockpot Shredded Chicken Salsa
2 chicken breasts (frozen) 1 can of black beans (rinsed) 1/2 Chopped onion 2 cloves Garlic 1 cup dry quinoa (rinsed) 2 cups salsa 2 cups water
*Optional: Add a dollup of Greek Yogurt, shredded cheese and/or Avocado to it for added flavor (and healthy fats).
Throw it all in and place on high for 4 hours. About an hour before it's ready, I start pulling the chicken apart. It's SUPER moist by now, so pulling it will just add all the juices together. Plus, it's prettier to have pulled chicken, instead of boring old chopped chicken.
And why frozen chicken breasts, you ask? I have found they stay much more moist (man, that word is creeping me out), than thawe d chicken. But, do what you have!
WARNING!! This is sooooo dang good, you'll want to go back for 2nd's. And while you might justify it as, "well it's healthy Taryn, no biggie". Well, you can still have too much of a good thing! Portions, my friends! MEASURE IT OUT! Trust me, this is so nutrient dense, you'll be full with 1 portioned serving. And EAT SLOW! Chew your food. You will fill up much faster and require less (meaning, no need for Round 2).
