Greek Chicken & Quinoa

Ingredients
  • 1-2 lb. chicken cut into cubes or strips
  • ½ cup chicken broth
  • 2 T lemon juice
  • 1 T honey
  • 1 T dried oregano
  • 1 T minced garlic
  • ½ tsp onion powder
  • ½ sliced red onion
Instructions
  1. In slow-cooker, combine cup chicken broth, lemon
  2. juice, and honey.
  3. Combine dried oregano, minced garlic
  4. and onion powder in a bowl and mix to coat chicken
  5. with seasoning.
  6. Add onion and chicken to crock pot.
  7. Cover and cook on High for 2-4 hours or on Low for 4–6
  8. hours, or until chicken is cooked through.
  9. Cook quinoa as directed on package. Spoon ¼ cup
  10. greek yogurt or hummus over cooked quinoa.
  11. Place ¼ of the chicken and onions onto quinoa.
  12. Top with tomato, cucumber, and red pepper strips, if desired.
